Easy Crockpot Baked Potato Soup

This week when it came to meal plan, I was super excited because we are scheduled to have cooler fall like weather all week! (In Houston, it can go from 90 one day to 50 the next). Needless to say, I’m so thankful for the seasonal temps.

Thus, my husband requested some good cold weather food. One of our favorites I’ve been making for several years is this easy baked potato soup!

With 3 young children, I am all about easy meals made with real food, and my crockpot and instant pot are two of my favorite things.

Easy Crockpot Baked Potato Soup

Nothing like some great cold weather food! Throw in some potatoes in the morning (with a few other things) and have a delicious soup ready for dinner.

Ingredients

  • 6 Large Baking Potatoes
  • 1 onion, chopped
  • 3 cloves garlic, crushed
  • 1/4 cup butter
  • 1 qt chicken broth
  • 1 tsp pepper
  • 2.5 tsp salt
  • 1 cup heavy whipping cream
  • 1 cup shredded sharp cheese (plus more for serving)
  • 3 tbsp chives or green onions (chopped), plus more for serving
  • 6 pieces bacon * optional (for serving)

Instructions

  1. Peel and chop potatoes into cubes and add to slow cooker. 

  2. Add the chopped onion, garlic, butter, chicken broth, salt and pepper as well. Cook on low for 8 hours or high for 4 (or until potatoes are tender enough to mash)

  3. Using a potato masher, mash potatoes until desired texture is reached. Add in heavy whipping cream, 1 cup shredded cheese, and 3 tbsp green onions and stir well.

  4. Serve with toppings (cheese, green onions, bacon, sour cream), if desired. 

Recipe Notes

*For ease of clean up, try using slow-cooker liners.

*This soup always makes enough for us to eat on it for a few meals. When reheating, sometimes I add in some water, as it tends to thicken up in the refrigerator.
