Nothing like some great cold weather food! Throw in some potatoes in the morning (with a few other things) and have a delicious soup ready for dinner.
Peel and chop potatoes into cubes and add to slow cooker.
Add the chopped onion, garlic, butter, chicken broth, salt and pepper as well. Cook on low for 8 hours or high for 4 (or until potatoes are tender enough to mash)
Using a potato masher, mash potatoes until desired texture is reached. Add in heavy whipping cream, 1 cup shredded cheese, and 3 tbsp green onions and stir well.
Serve with toppings (cheese, green onions, bacon, sour cream), if desired.
*For ease of clean up, try using slow-cooker liners.
*This soup always makes enough for us to eat on it for a few meals. When reheating, sometimes I add in some water, as it tends to thicken up in the refrigerator.
